During hunting season our Hi Mountain Ultimate Jerky Cutting board gets a good workout, but generally I put the board away after our butchering is done. This year hunting was tough, and we only got enough deer meat to use as meal meat, and no extra to make jerky out of so I decided to try out the jerky board to make minute steaks for Philly deer steak hoagies.
I used partially frozen deer loin, and it sliced great, I used the board to slice the onions also! You place the meat on the board, and run the knife alone the ridge to get evenly sliced meat each time. There are 2 different depths available, 1/4″ and 3/8″. I liked using the 1/4″ to cut these minute steaks, although I would use both the 1/4″ and 3/8″ for jerky. The back of the jerky board can be used as a regular cutting board, and the included knife nestles into the board for easy storage, and the molded in handle makes the board easy to tote to the table. The knife is made from high carbon 420 stainless steel and is ergonomically designed, and sliced thru everything with ease. This process was really easy to do, and the board is dishwasher safe, so clean up was really quick. I then pan fried the meat in some oil
and seasonings, I used the Hi Mountain Deer Steak Western Seasoning. I also pan fried some onion and pepper strips and assembled the hoagie, the following recipe will make 4 hoagies. While the hoagies were in the broiler, I used the cutting board to slice cucumbers and onions for a side salad.
1 pound deer loin cut into thin strips
2 teaspoons Hi Mountain Deer Steak Western Seasoning
3-4 tablespoons olive oil
1 onion sliced thin
1 green pepper sliced thin
Optional: sliced mushrooms
4-8 slices mozzarella cheese slices
4 hoagie rolls
- Place the deer minute steaks in a large bowl season with Deer Steak Western Seasoning.
- Heat half of the oil in a skillet over medium-high heat. Saute deer and remove from pan. Heat the remaining oil in the skillet, and saute the onion, (mushrooms) and green pepper.
- Preheat oven on broiler setting.
- Divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced mozzarella cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, serves 4. Optional: I like to serve these steak hoagies with horseradish mayo that I make with fresh horseradish.
